Chilled Avocado Soup with Cumin

CHILLED AVOCADO SOUP W/ CUMIN  (Serve 4)

1.  Avocados, Ripe                                         3 ea.
2.  Scallions, White Part Only, Bunch, Chpd.            1 ea.
2.  Garlic Cloves, Chpd.                                 2 ea.
2.  Lemon Juice                                               1 ea.
3.  Cumin, Ground                                          ¼ +
3.  Paprika                                                       ¼ +
4.  Vegetable Stock                                         2 cups
5.  Iced Water                                                 1 ¼ cups
6.  Pepper                                                        TT
G. Parsley, Chpd.                                            AN

MIP:  BLENDER/LARGE BOWL

  • PUT ONE AVOCADO AND 2’s IN BLENDER & PUREE
  • ADD SECOND AVOCADO & PUREE
  • ADD THIRD AVOCADO & 3’s, THEN PUREE
  • GRADUALLY ADD 4, THEN CHILL FO 2-3 HOURS
  • WHEN READY TO SERVE, STIR IN 5, SEASON W/ 6 & GARNISH

Chef’s Tip:  This is best used as appetizer or lunch side dish and served in a cup.

            The recipes in this series also use a unique numerical system, which I have devised, that speeds things up.  Every ingredient is listed in the order it is to be used.  If to be used together, they all have the same number.  With experience only these numbers are necessary to master the recipe. It’s quick and easy.  Try it!
