Jicama and Cucumber Salad with Orange-Lime Marinade

JICAMA & CUCUMBER SALAD W/ ORANGE-LIME MARINADE (Serve 2)
1. Jicama, Matchsticks 8 oz.
2. Orange Juice ¼ cup
2. Lime Juice 1 T
2. EVOO 1 T
2. Coriander, Ground 1/8 +
2. Chili Powder ¼ +
2. Salt TT
3. Cucumber, Medium, Seeded,
Cut Lengthwise ½ ea.
G. Cilantro, Minced 1 T
G. Red Cabbage Leaf 2 ea.
MIP: LARGE BOWL
- COMBINE 2’s, ADD 1 & MARINATE FOR ONE HOUR
- CUT 3 LENGTHWISE, THEN CROSS WISE INTO ¼” PIECES
- JUST BEFORE SERVICE, ADD 3 PIECES TO MARINADE
SERVE: RED CABBAGE LEAF, SALAD, GARNISH
