Marshmallow Creme Hot Fudge

MARSHMALLOW CRÈME HOT FUDGE (Yield: 1 cup)

1.  Semisweet Chocolate, Chpd.                     6 oz.
1.  Unsweetened Cocoa Powder                    ½+
1.  Instant Coffee                                            ½ +
2.  Heavy Cream                                 ½ cup + 1 T
3.  Marshmallow Crème                                  3 T                                                                               

MIP: SAUCE POT/ BOWL 

  • COMBINE 1’s IN BOWL
  • BRING 2 TO SIMMER & POUR OVER 1’s
  • WAIT 30 SECONDS THEN WHISK UNTIL SMOOTH
  • FOLD IN 3

            If this is your first visit to this site it might help to know what the symbols mean.  “EVOO” means Extra Virgin Olive Oil, “TT” means “To Taste,”  “AN” means “As Needed,”  “+” means “Teaspoon,” “T” means “Tablespoon” and “G” means Garnish.  MIP is an abbreviation for the French phrase mise en place which means to “to put in place” or to have at hand those things you need to prepare the recipe.

            The recipes in this series also use a unique numerical system, which I have devised, that speeds things up.  Every ingredient is listed in the order it is to be used.  If to be used together, they all have the same number.  With experience only these numbers are necessary to master the recipe. It’s quick and easy.  Try it!

Kirstie Alley – Seeing Stars!

She joked in front of the camera about her day of “seeing stars”!!  Her dance partner reported that she collapsed three times on the stage.  Why?  Well, she collapsed because she was so weakened from lack of needed nutrients.  She FORGOT to eat (or did she?)!  Kirstie has a history of weight management issues.    This reminds us ALL of how important it is to KNOW YOUR NUMBERS and HAVE A PLAN.   Our lives are busy too.  We may not be practicing dance routines in a studio for many hours, but we are busy with other schedules.  It is so important to remember that skipping meals does more harm than good for both those trying to lose weight and those maintaining a healthy weight.

Missing a meal could cause a drop in blood sugar, BUT so could eating a donut!  Did Kirstie skip a meal or did she snack on simple carbs?  Snacking on simple sugars could cause hypoglycemia.  This is highly individualized and so our diet should be as well. But anyone suffering from hypoglycemic episodes should revisit their meal plan!  Mary Ellen Caldwell, RD

Cinco de Mayo!!!

Cinco de Mayo is a huge holiday in Mexico!  NOT… its actually celebrated more in the US than any other place.  LA has the biggest celebration followed by Houston.  Another misconception is that its Mexican Independance day.  Truth is it commemorates the Battle of Puebla, when the Mexican army triumphed over French forces in Mexico in 1862.  But what is true is there’s not better time to get some authentic mexican cooking.  
 
Here’s my cousin Sarah’s quacamole recipe to help you get into that authentic Mexican mood.  Nutritionists, Dietitians and weight loss experts promote it.  Avocado may be called a fat… but its a heart healthy fat.  Enjoy!
 
Cousin Sarah’s Quac: 
 
4 small avocados,  2 roma tomatoes,  1 small onion, 2 serrano chiles, 2 cloves of garlic, 6 sprigs of fresh cilantro, 1 small lime for juice
 
1. (optional) Place tomatoes, garlic, and Serrano chiles on shallow pan and into a 375 degree oven to roast then cool to touch.
 
2. Dice the tomatoes and onion. Mince the garlic, Serrano chiles, and cilantro. Place all in a large bowl.
3. Scoop the flesh from the avocados and place it in the bowl with the tomatoes, chiles, garlic, onions and cilantro
4. Mash all of the ingredients together with a fork until the avocado has the desired texture.
5. Squeeze lime over mixture. Add salt to taste and stir one final time to mix ingredients well.  Do not overstir.  Serve with warm tortilla chips to dip the guacamole.

Enjoy with your favorite beverage!!  It should contain a lime!!!   Martha McHenry, RD, CDE

Crispy Brown Rice – Gluten Free Cereal

It looks good on the box, it smells good and it is good!   Just tried Erewhon 100% whole grain Crispy Brown Rice gluten-free cereal.  Yummy as a snack by the handful and good as a cereal – you can even make crispy rice snacks! Just FYI for you from your nutritionists/registered dietitians.  (their web site is www.erewhoncereal.com)
